The texture, flavor, and shelf life of cookies depend on the recipe formulation, mixing method, baking temperature, and cooling process. Common production challenges include checking (spontaneous cracking after baking), excessive spread, uneven coloring, and premature staling. Industrial cookie production uses rotary molders, wire-cut machines, or depositors depending on the dough type.
