  • Whole milk — 6.0 kg
  • Salt — 0.5 kg
  • Sodium bicarbonate — 0.5 kg
  • Ammonium bicarbonate — 0.1 kg
  • Vanilla flavoring — 0.08 kg

Technological notes

Like other sugar cookies, Narizne is made from a short, plastic dough. The relatively high starch content (12%) produces a particularly tender, crumbly texture. Dough temperature: 22–25 °C. Baking: 220–240 °C for 4–5 minutes. Final moisture: 5.0–7.0%. TS = total solids.
