Recipe (industrial formulation)

  • Top-grade wheat flour — 100.0 kg
  • Powdered sugar — 40.0 kg
  • Butter or margarine (TS 84%) — 40.0 kg
  • Mélange (liquid whole egg) — 10.0 kg
  • Salt — 0.3 kg
  • Sodium bicarbonate — 0.3 kg
  • Ammonium bicarbonate — 0.1 kg
  • Vanilla flavoring — 0.1 kg

Technological notes

Enriched cookies have significantly higher fat and sugar ratios than standard sugar or hard types. The dough is very short and crumbly — it requires minimal mixing to avoid toughness. Dough temperature: 18–22 °C. The high butter content produces a rich, sandy texture and pronounced buttery aroma. Baking: 200–220 °C for 8–10 minutes. Final moisture: 4.0–6.0%.
