GOST

GOST (ГОСТ, an abbreviation for State Standard) is a set of technical regulations and quality standards originally developed in the Soviet Union and still widely used across post-Soviet countries including Russia, Ukraine, Belarus, Kazakhstan, and others. In the food industry, GOST documents define product classifications, ingredient requirements, manufacturing processes, testing methods, labeling rules, and shelf life parameters.

GOST standards cover virtually every food category — from chocolate and confectionery to bakery, dairy, meat, and beverages. Products manufactured according to GOST are expected to meet strict and clearly defined quality criteria, which historically ensured uniformity across large-scale industrial production. Many food technologists still reference GOST recipes and specifications as reliable, well-tested formulations when developing new products or adapting traditional ones to modern equipment and ingredients.
