GOST 32741-2014 “Semi-finished products. Fruit and vegetable fillings and preserves” is the interstate standard governing the production and quality requirements for fruit and vegetable fillings and preserves (podvarki) used in the food industry. These semi-finished products are widely used as components in confectionery, bakery, dairy, and other food manufacturing sectors.
Scope
The standard covers two main product categories:
- Fillings (nachynky) — fruit or vegetable-based semi-finished products with approximately 40% total solids content, used as internal components of baked goods, confectionery, and dairy products.
- Preserves (podvarki) — concentrated fruit or vegetable preparations with approximately 60% total solids content, offering greater shelf stability and lower moisture activity.
Key requirements
The standard establishes requirements for organoleptic properties (appearance, color, taste, odor, consistency), physicochemical parameters (total solids content, titratable acidity, mineral impurities, heavy metals), and microbiological safety indicators. It specifies permitted raw materials, processing aids, and food additives, as well as packaging, labeling, storage, and transportation rules.
Classification
Fillings and preserves covered by this standard can be classified by raw material type (fruit, berry, vegetable, or mixed), by consistency (homogeneous or heterogeneous with visible pieces), and by heat resistance (thermostable or non-thermostable). The standard provides a framework for manufacturers to declare specific quality parameters for each product within these categories.
