GOST 21-94 Granulated Sugar

GOST 21-94 “Granulated Sugar” is an interstate standard that applies to granulated sugar โ€” a food product consisting of sucrose in the form of individual crystals, intended for retail sale, industrial processing, and other purposes. This standard was developed by the Ukrainian Research Institute of the Sugar Industry and adopted by the Interstate Council for Standardization, Metrology, and Certification (Protocol No. 4, October 21, 1994). Date of introduction: January 1, 1997.

Scope

The standard covers granulated sugar produced from sugar beet or raw cane sugar. It establishes mandatory requirements for product quality that ensure safety for human health and environmental protection. The standard is applicable for certification purposes.

Key physicochemical requirements

GOST 21-94 specifies the following quality parameters for granulated sugar:

  • Sucrose content (in terms of dry matter): not less than 99.75% for retail sugar, not less than 99.55% for industrial processing sugar
  • Moisture content: not more than 0.14% (retail), not more than 0.15% (industrial)
  • Reducing sugars: not more than 0.050% (retail), not more than 0.065% (industrial)
  • Ash content: not more than 0.03% (retail), not more than 0.05% (industrial)
  • Color: not more than 0.8 units of optical density (retail), not more than 1.5 (industrial)
  • Iron impurities: not more than 3 mg/kg

Organoleptic requirements

The sugar must be white with a uniform luster, sweet in taste without any foreign flavors or odors. The solution in water must be transparent, without insoluble sediment or foreign impurities.
