Vinegared rice is steamed short-grain rice seasoned with a mixture of rice vinegar, sugar, and salt, creating a slightly glossy, tangy, and subtly sweet base. It is best known as sushi rice (shari or sumeshi) — the essential foundation of all sushi dishes — but is also used in other Japanese preparations like chirashi bowls, onigiri, and inari.

Preparing perfect vinegared rice requires attention to detail: the rice must be washed thoroughly, cooked with precise water ratios, and dressed with the vinegar mixture while still hot so it absorbs evenly.
