Grillage is a confectionery product made from roasted or caramelized nuts mixed with sugar or caramel. The nuts — typically almonds, hazelnuts, walnuts, or peanuts — are coated in hot sugar syrup, cooled, and then crushed or broken into pieces of various sizes. This crunchy, sweet-nutty mixture is widely used as a filling, inclusion, or decoration in chocolate, pralines, cakes, and ice cream.

In professional confectionery, grillage can be fine-ground into a paste for truffle fillings or left in coarse pieces for texture contrast in bars and bonbons. The caramelization temperature, sugar-to-nut ratio, and nut type all affect the final flavor and crunch. Grillage is closely related to praliné, nougat, and croquant — all members of the caramelized nut family — but differs in preparation method and intended use. Proper storage in airtight containers is important to prevent moisture absorption and loss of crispness.
