Aglupectin HS-RAM is a high-methoxyl (high-ester) rapid-set pectin (E440i) extracted from citrus peel. It is part of the pectin range produced by the Italian company Silvateam.

Instructions for use
It is recommended to dissolve Aglupectin HS-RAM in hot water under constant stirring before adding to the liquid phase. As a high-methoxyl pectin, it requires a high sugar concentration (typically above 55%) and an acidic environment (pH 2.8โ3.5) to form a proper gel. The “rapid set” designation means it gels quickly upon cooling, which is important for products that must set before fruit pieces settle to the bottom.
Effects of application
Aglupectin HS-RAM improves the texture and stability of dairy-based beverages, prevents protein sedimentation in acidified milk drinks, and provides a smooth, uniform mouthfeel. In jam and preserve production, rapid-set pectins are preferred when the product contains suspended fruit pieces that must remain evenly distributed throughout the gel.
