Plum caramel (Слива) is a GOST caramel with a fruit filling, wrapped, rectangular or oval in shape. The shell is made from pulled or unpulled caramel mass colored lemon-yellow. The filling is fruit-based (plum).

Fruit filling

The plum filling is made from fruit purée, sugar, glucose syrup, and lactic acid. The total solids content of the filling is 84%, providing a balanced texture that is soft enough to contrast with the hard caramel shell but concentrated enough to maintain shape.

TS = total solids. Heat-stable flavorings and colorings are recommended for the caramel mass.
