Recipe (industrial formulation)

  • Cocoa liquor (TS 97.4%) — 20.0 kg
  • Granulated sugar (TS 99.85%) — 45.0 kg
  • Cocoa butter (TS 100%) — 15.0 kg
  • Whole milk powder (TS 96%) — 20.0 kg
  • Vanilla flavoring — 0.03 kg
  • Lecithin — 0.4 kg

Technological notes

Olenka is a classic milk chocolate with approximately 35% cocoa solids and 20% milk solids. The production process includes mixing, refining (target particle size below 25 microns), conching (6–16 hours at 50–60 °C for milk chocolate — lower than dark chocolate to protect milk proteins), and tempering at 29–30 °C. The relatively high milk powder content gives Olenka its characteristic creamy, caramel-like sweetness.

TS = total solids.
