Olenka chocolate (Шоколад Оленка) is one of the most iconic GOST milk chocolate recipes in the post-Soviet confectionery tradition. Named after a girl’s name (a diminutive of Olena/Helena), this chocolate features a creamy, sweet milk chocolate formulation that became a household staple across the USSR.

Technological notes
Olenka is a classic milk chocolate with approximately 35% cocoa solids and 20% milk solids. The production process includes mixing, refining (target particle size below 25 microns), conching (6–16 hours at 50–60 °C for milk chocolate — lower than dark chocolate to protect milk proteins), and tempering at 29–30 °C. The relatively high milk powder content gives Olenka its characteristic creamy, caramel-like sweetness.
