Olenka chocolate (Шоколад Оленка) is a GOST milk chocolate recipe — one of the most iconic Soviet-era chocolate brands. Named after a young girl (the Ukrainian diminutive of “Olena”), this chocolate bar features a rich milk chocolate with a smooth, creamy texture and a balanced cocoa-dairy flavor.

Technological notes
Olenka is a standard milk chocolate formulation with approximately 35% cocoa solids and 20% milk solids. Production follows the typical milk chocolate process: mixing, refining (particle size below 25 microns), conching at controlled temperature to protect milk proteins (typically 50–60 °C for 8–16 hours), and tempering at 28–30 °C working temperature. The result should be a glossy bar with a clean snap and a smooth melt.
