- Mélange — 18.0 kg
- Chopped roasted nuts (typically walnuts or hazelnuts) — 30.0 kg
- Compressed yeast — 3.5 kg
- Salt — 0.5 kg
- Vanilla flavoring — 0.1 kg
Technological notes
Prepared by the sponge method. Nuts are roasted, cooled, chopped, and folded into the finished dough before depositing into molds. Baking: 180–200 °C for 40–55 minutes. Final moisture: 18–22%. The high nut content gives this cake a distinctive flavor and a denser crumb compared to fruit-based pound cakes.
