Mu-Mu Caramel GOST Recipe

Mu-Mu caramel is a classic GOST caramel with a fondant filling. The shape is rectangular or oval. The shell is made from untreated caramel mass with added condensed milk, slightly crystallized, with a color ranging from light brown to brown. The filling is sugar fondant. The product is wrapped.

1 kg contains at least 105 wrapped pieces. Moisture content: 5.79% (+1.0%; −1.3%).

Recipe per 1 ton of finished unwrapped product

  • Caramel mass (TS 97.9%) — 653.00 kg
  • Fondant filling (TS 89.0%) — 350.01 kg

Caramel mass per 1 ton

  • Granulated sugar (TS 99.85%) — 393.41 kg
  • Glucose syrup (TS 78.00%) — 176.69 kg
  • Condensed milk (TS 74.00%) — 125.57 kg

Notes

The addition of condensed milk to the caramel mass gives Mu-Mu its characteristic toffee-like flavor and brown color. The slight crystallization (protsukrovanist) of the shell is a deliberate textural feature, not a defect. This is one of the more complex caramel formulations in the GOST collection due to the milk component. TS = total solids.
