Montpensier (Монпансьє) is a classic GOST hard candy — small, colorful fruit drops packed in airtight packaging. They are made from untreated or partially pulled caramel mass, colored in at least four different colors per assortment. Each piece is tiny: 1 kg contains at least 600 individual candies.

Notes
Both flavorings and colorings must be heat-stable to withstand caramel mass processing temperatures. Flavoring dosages are based on old GOST essences; modern flavorings require trial dosage optimization. TS = total solids.
