Montpensier (Монпансьє) is a classic GOST hard candy — small, colorful fruit drops packed in airtight packaging. They are made from untreated or partially pulled caramel mass, colored in at least four different colors per assortment. Each piece is tiny: 1 kg contains at least 600 individual candies.

Moisture content of finished Montpensier: 1.74% (+1.0%; −0.5%).

  • Caramel mass (TS 98.50%) — 991.32 kg
  • Citric acid (TS 91.20%) — 10.02 kg
  • Flavorings (assorted) — 1.0 kg
  • Food colorings (assorted, at least 4 colors) — 1.0 kg

Caramel mass per 1 ton

  • Granulated sugar (TS 99.85%) — 709.63 kg
  • Glucose syrup (TS 78.00%) — 354.81 kg

Moisture content of caramel mass: 1.5% (+1.0%; −0.5%).

Notes

Both flavorings and colorings must be heat-stable to withstand caramel mass processing temperatures. Flavoring dosages are based on old GOST essences; modern flavorings require trial dosage optimization. TS = total solids.
