Milk chocolate with nuts (Молочний шоколад з горіхами) is a GOST milk chocolate recipe with whole or chopped roasted nuts — typically hazelnuts or almonds. The combination of creamy milk chocolate and crunchy toasted nuts is one of the most popular chocolate formats worldwide.
Recipe (industrial formulation per 1 ton)
- Cocoa liquor (TS 97.4%) — 180.0 kg
- Granulated sugar (TS 99.85%) — 350.0 kg
- Cocoa butter (TS 100%) — 80.0 kg
- Whole milk powder (TS 96%) — 180.0 kg
- Roasted nuts (hazelnuts or almonds) — 200.0 kg
- Vanilla flavoring — 0.3 kg
- Lecithin — 4.0 kg
Technological notes
The chocolate base is prepared by standard milk chocolate technology. Nuts are roasted at 130–150 °C for 15–25 minutes until golden and fragrant, then cooled. They may be used whole, halved, or chopped depending on the desired product format. Nuts are added to the tempered chocolate mass before or during depositing into molds. Tempering at 28–30 °C. Even nut distribution requires proper viscosity control.
