May pound cake (Травневий кекс) is a GOST pound cake recipe — a yeast-leavened enriched cake made from top-grade wheat flour with butter, eggs, and raisins. It is one of the standard pound cake formulations in the Soviet confectionery recipe collection, named after the month of May.

Recipe (industrial formulation)

  • Top-grade wheat flour — 100.0 kg
  • Butter (TS 84%) — 30.0 kg
  • Granulated sugar — 28.0 kg
  • Mélange — 16.0 kg
  • Raisins — 20.0 kg
  • Compressed yeast — 3.5 kg
  • Salt — 0.5 kg
  • Vanilla flavoring — 0.1 kg
  • Powdered sugar (for dusting) — as needed

Technological notes

Prepared by the sponge (opara) method. The dough has a moderate enrichment level — less butter and sugar than the Capital (Stolichny) cake but more than the Health (Zdorovya) version. Raisins are washed, dried, and folded into the finished dough. Baking: 180–200 °C for 35–50 minutes. After cooling, dusted with powdered sugar. Final moisture: 20–24%.
