Lux chocolate (Шоколад Люкс) is a GOST premium dark chocolate recipe — one of the highest-quality formulations in the Soviet chocolate collection. It features a high cocoa liquor content, resulting in an intense, complex chocolate flavor with pronounced bitterness and deep cocoa aroma.
Recipe (industrial formulation)
- Cocoa liquor (TS 97.4%) — 60.0 kg
- Granulated sugar (TS 99.85%) — 35.0 kg
- Cocoa butter (TS 100%) — 5.5 kg
- Vanilla flavoring — 0.04 kg
- Lecithin — 0.4 kg
Technological notes
With approximately 60% cocoa solids, Lux is a semi-bitter to bitter dark chocolate. Extended conching (16–24 hours) is essential to develop the full flavor complexity and reduce astringency. Refining must achieve a particle size below 20 microns for a smooth mouthfeel. Tempering temperatures: melt to 50 °C, cool to 27 °C, reheat to 31–32 °C. This formulation requires high-quality cocoa beans with good flavor potential — processing cannot compensate for poor raw material in a high-cocoa chocolate.
