Little Humpbacked Horse chocolate (Шоколад Коник-Горбунок) is a GOST milk chocolate recipe named after the beloved fairy tale character from P. Yershov’s poem. This is a milk chocolate formulation designed as a children’s product — with a milder cocoa flavor and higher milk content than adult-oriented chocolates.

• Cocoa liquor (TS 97.4%) — 150.0 kg
• Granulated sugar (TS 99.85%) — 420.0 kg
• Cocoa butter (TS 100%) — 80.0 kg
• Whole milk powder (TS 96%) — 250.0 kg
• Vanilla flavoring — 0.4 kg
• Lecithin — 4.0 kg

Technological notes

This formulation has a lower cocoa liquor content and higher milk solids compared to standard milk chocolate, producing a milder, creamier taste suitable for children. Production follows standard milk chocolate technology with careful temperature control during conching to protect milk proteins. Tempering at 28–30 °C. TS = total solids.
