Fortified Soaking Syrup GOST Recipe

Fortified soaking syrup (Сироп для промочки кріплений) is a GOST recipe for an alcohol-enriched sugar syrup used to moisten and flavor sponge cake layers in premium cakes and pastries. The addition of alcohol (cognac, rum, or dessert wine) adds depth of flavor and extends shelf life through antimicrobial action.

Technological map

Sugar is dissolved in water and boiled for 1–2 minutes. The syrup is cooled to 20–25 °C — this is critical, as alcohol must never be added to hot syrup (it would evaporate immediately, losing both flavor and preservative effect). Cognac, rum, or wine is stirred in after cooling, followed by vanilla.

Total solids: approximately 35–40% (excluding alcohol). The alcohol content in the finished syrup is typically 2–5%, which contributes noticeable flavor and a mild preservative effect. This syrup is used for premium celebration cakes, rum babas (Rum Baba), and other alcohol-flavored confections. It must be applied evenly to avoid dry spots or overly soaked areas.
