Coffee paste for Luch candies (Паста кавова для цукерок “Луч/Промінь”) is a GOST recipe for a smooth, coffee-flavored confectionery paste used as a filling for the “Luch” (Ray/Beam) candy assortment. This semi-finished product combines roasted coffee extract with sugar, fat, and cocoa components to produce a rich, aromatic filling.

The coffee paste is prepared by grinding all dry ingredients together with the fat component through roll refiners until the particle size is below 25 microns — the same refining technique used in chocolate production. The finely ground coffee contributes an intense roasted aroma and slight bitterness that pairs well with the sweetness of the sugar and the depth of the cocoa liquor.

After refining, the paste is mixed (similar to conching) at 40–45 °C for several hours to develop flavor and achieve a smooth, fluid consistency. The finished paste is used for filling molded chocolate shells in the Luch candy assortment. This paste belongs to the praline-type filling category — fat-based, smooth, and shelf-stable.
