Bulk weight chocolate (Шоколад ваговий) is a GOST recipe for plain dark chocolate sold by weight rather than as individually wrapped bars. This is a basic industrial chocolate formulation used both as a standalone product and as a base for other chocolate products and coatings.

Recipe (industrial formulation)

  • Cocoa liquor (cocoa mass, TS 97.4%) — 55.0 kg
  • Granulated sugar (TS 99.85%) — 45.0 kg
  • Cocoa butter (TS 100%) — 3.0 kg
  • Vanilla flavoring — 0.04 kg

Technological notes

The production process follows standard chocolate technology: mixing cocoa liquor with sugar and cocoa butter, refining through roll refiners to reduce particle size below 25 microns, conching for flavor development (typically 8–24 hours for dark chocolate), and tempering to form stable cocoa butter crystals. The tempered mass is deposited into molds, cooled in a cooling tunnel, and demolded.

This formulation produces a dark chocolate with approximately 55% cocoa solids. The cocoa butter addition improves fluidity for molding. TS = total solids.
