Barberry caramel is a classic GOST hard candy (caramel) made from untreated (non-pulled) caramel mass. It is typically wrapped, oval or rectangular in shape, and colored red. According to GOST requirements, 1 kg of finished product must contain at least 130 wrapped pieces.

- Caramel mass (total solids 98.50%) — 991.46 kg
- Citric acid (TS 91.20%) — 9.90 kg
- Barberry flavoring — 0.75 kg
- Vanilla flavoring (heat-stable) — 0.50 kg
- Red food coloring (synthetic, as natural colorings cannot withstand thermal processing) — 0.75 kg

- Granulated sugar (TS 99.85%) — 709.73 kg
- Glucose syrup (TS 78.00%) — 354.86 kg
Moisture content of finished caramel mass: 1.5% (+1.0%; −0.5%).
Notes
The flavoring dosages listed above are based on old GOST-era essences (alcohol-based tinctures). When using modern flavorings, the optimal dosage must be determined by trial.
