Dry perfume is a mixture of prepared natural aromatic herbs and spices , carefully dried and ground. This formulation is an old GOST recipe.

From a technological point of view, this semi-finished product is a natural flavoring, which is often used in bakery and confectionery products. During heat treatment and subsequent storage, such natural aromatic substances are brightly revealed despite the loss of aroma during baking, i.e. from a technological point of view, dry perfumes are heat-stable flavorings.

Dry Perfume GOST recipe

  • cinnamon – 10 kg;
  • clove spice – 3;
  • allspice, fragrant pepper – 3;
  • nutmeg – 3;
  • star anise – 2;
  • ginger – 2;
  • black pepper – 1;
  • cardamom – 1.

Recommendations for dry perfume formulations:

  • The dosage in this GOST recipe is relevant for high-quality raw materials manufactured according to GOST requirements. When using modern raw materials, it is often necessary to adjust the ratio;
  • all spice ingredients should be stored in an airtight container out of direct sunlight and with a minimum of air inside the container;
  • Like all aromatic components, especially multi-component ones, dry perfumes should be prepared just before use and not stored unnecessarily in a finished form.
