Apple Caramel GOST Recipe

Apple caramel (Яблуко) is a GOST caramel with a fruit filling, wrapped, rectangular or oval in shape. The shell is made from pulled or unpulled caramel mass colored green or light yellow. The filling is apple-based fruit mass.

Recipe per 1 ton of finished unwrapped product

  • Caramel mass (TS 97.9%) — approximately 680–700 kg
  • Apple fruit filling (TS 84%) — approximately 300–320 kg

  • Granulated sugar (TS 99.85%)
  • Glucose syrup (TS 78.00%)
  • Citric acid
  • Apple flavoring
  • Green or yellow food coloring

Apple fruit filling

The apple filling is prepared from apple purée, sugar, glucose syrup, and citric acid. The total solids content is approximately 84%. Apple purée is one of the most commonly used bases for caramel fillings due to its natural pectin content, which contributes to the proper consistency and gelling behavior of the filling.
