DSTU-P 4585:2006 “Enriched bakery products” is the Ukrainian preliminary national standard (the “P” prefix indicates preliminary/trial status) covering enriched (zdobni) bakery products โ items made from yeast-leavened dough with elevated amounts of sugar, fat, and eggs compared to regular bread.
Scope
The standard applies to enriched bakery products including buns, rolls, braided breads, sweet pies, and other yeast-raised items where the combined sugar and fat content exceeds 14% of the flour weight. These products occupy a category between everyday bread and confectionery โ they are sweeter and richer than bread but are still classified as bakery rather than confectionery items.
Classification
Products covered by this standard are classified by flour type (primarily top-grade and first-grade wheat flour), by shape (round, oval, braided, figured), by weight (piece weight typically from 50 g to 500 g), and by finish (plain, glazed, with toppings such as poppy seeds, sesame, streusel, or powdered sugar).
Key quality requirements
- Organoleptic: proper shape, golden-brown crust color, soft elastic crumb, pleasant sweet aroma, characteristic taste without foreign flavors
- Physicochemical: moisture content, acidity, porosity, mass fractions of sugar and fat โ all within specified limits for each product type
- Safety: heavy metals, pesticides, mycotoxins, and microbiological indicators must comply with Ukrainian sanitary regulations
